Looks like just another day in an international terminal. Except. This is the recently remodeled Tom Bradley International Terminal at LAX (Los Angeles Airport) and the terminal has become much more than just a place to board an airplane.

At important destinations around the world, to attract leisure and business travelers, airport terminals have been remodeled at great expense. A matter of national pride and economic opportunity, Heathrow's Terminal 5, Singapore's Changi Airport, Tokyo's Haneda Airport and Mumbai's new Terminal 2 are proof-positive we are living in a golden age of airport modernization.

Because international travelers are encouraged to arrive two hours before departure and more often than not there is time between connecting flights, airport terminals have been redeveloped as destinations with features normally found in upscale malls.

At Tom Bradley International, once passengers have passed through security, they move on to Level 4 to find their boarding gates. Waiting for them in the airy expanse called the Great Hall are retail shops as varied as Bulgari, Fred Segal, Coach and Victoria Secret. At an elegantly curved counter, a mother, father and their eight year old daughter happily share a lunch of smoked salmon on toast points, freshly made blinis topped with Ossetra caviar and a roasted tomato-burrata salad. The husband and wife toast one another. The rims on their cocktail glasses are crusted with salty, crunchy caviar powder. Maybe they are celebrating their anniversary or their daughter's birthday. Or, maybe, while they wait to board an international flight, they are celebrating their good fortune to be enjoying lunch at the Petrossian Caviar & Champagne Bar.

Since December 2013, the well-known caviar purveyor, Petrossian has been serving up world-class food and beverages at the Tom Bradley International Terminal. After clearing security, travelers can stop to enjoy a snack, a lunch or a full course dinner complete with choices from an extensive menu that includes a selection of premium caviars, appetizers, salads, entrees, desserts, premium wines (French and American), champagne (primarily French), beer (Belgium, Austrian and Czech), quality spirits (Bourbon, Scotch and Cognac) and--of course!--an impressive selection of the world's best vodkas made from wheat, grain and rye.

And because this is Petrossian, two specialty cocktails feature caviar. The Caviar Martini is fortified with a caviar stuffed olive, a cocktail onion and a caviar cube. In the High Society cocktail, Tanqueray gin, St. Germaine and green Chartruse share a glass. That mix would be satisfying enough but the cocktail has the added pleasure of a powdered caviar dusting on the rim and a disk of lemon peel topped with a demitasse spoonful of the powder. The caviar looks every bit like a bathing beauty lounging on a float in a sundrenched pool.

Travelers pressed for time can pick up Petrossian's version of grab-and-go. No ordinary sandwich and bag of chips sits in the Petrossian Tote. Choosing from a Caviar in the Sky menu, with prices ranging from $125.00 to a princely $1,582.00, passengers carry on board a selection of smoked salmon, caviar, appetizers, salads, toast points and blini designed to create a very elegant picnic at 30,000 feet.
